Cuisine of the northern Andes was generally simple but delicious.  Lots of grilled meats, potatoes, corn, and rice.  The top right dish is dry, stringy beef, and in fact this region is where jerky originated.  ('Jerky' is the only Incan word to make it into the English lexicon.)
