Peru has three regions with unique cuisines: coastal, Andean, and jungle. There
is also a huge variety of food within these regions. The most famous
Peruvian dish is ceviche (top right), which is fish or shellfish
'cooked' in lime juice. Stewed meat and fried fish are also typical
foods of the coast. Most dishes come with rice, corn, potatoes, or
yucca.
